Tuscan White Beans

I believe in simple foods.

Simple is best. Don’t unnecessarily complicate things. Let the food shine on it’s own. I also believe that some of the poorest people eat the best foods. They know how to make simple and inexpensive foods shine. And one of my favorite simple dishes is Tuscan White Beans.

TUSCAN WHITE BEANS

2     15.5 oz cans Great Northern Beans

1     15.5 oz can Petite Dice or Crushed Tomatoes

2 to 6 cloves garlic, whole

1 TSP each Salt, Pepper, Thyme.

Remove skins from cloves of garlic, and place in a good sized sauce pan before heating. Heat to medium high heat and let the garlic roast for about ten to fifteen minutes, just until it softens enough to crush easily with spoon. Do not worry about a little scorching. Dump in the beans and tomatoes and stir in salt, pepper, and thyme. Simmer for ten minutes, serve over rice or with warm French or Italian bread.
